Sea crab from Ca Mau is famous across Vietnam. Crabs live among mangroves where brackish water and rich silt make them firm, sweet and full of roe. Many farmers raise them extensively within the forest, tie them as soon as they are caught and ship them live to the cities.
Origin matters, but what matters most is a lively, firm crab cooked right after it is chosen.
